Lazy Day

The Lazy Day on the "homestead" is coming to an end. Tonight we had fried Spanish rice, with sausage. My kids loved it. If you would like the recipe it is as follows.

In a wok place sausage, Tbsp Olive Oil and
rosemary, thyme, parsley, oregano, basil, salt, pepper, and a pinch of paprika. Fry until brown. Then add a package of frozen veggies, a south western blend. Add one can of pinto beans. Add one quart of tomato sauce. Simmer. While it simmers cook in a rice cooker 5 cups of dried rice. (Makes like 10 to 15 cups) Once the rice is done, turn the tomato mix off and add the rice. Stir until nice and blended. Serves 8-9 easily with second helpings.
